A TASTY LEMON PIE RECIPE
A lemon pie is the ideal dessert to extend the summer a little bit ! I love the mix of different flavours in this recipe. The alliance between the sweet pastry cream and the acid lemon is delightful… A nice treat to enjoy during a mild and sunny afternoon.
To make this lemon pie,
you will need (for 4 to 6 people) :
For the dough :
- 1 egg
- 125g of powdered sugar
- 250g of flour
- 100g of butter
- lemon juice
For the pastry cream with lemon :
- 3 egg yolks
- 50g of powdered sugar
- 30cl of milk
- 4 tbsp of flour
- 1 lemon
- vanilla extract
For the topping :
- 4 lemons
- 80g of icing sugar
1 – Start with the dough : preheat the oven at 180°C (thermostat 6) and mix the egg with 125g of sugar. Add a tbsp of lemon juice and a pinch of salt.
2 – Pour the flour on your kitchen counter and dig a well. Pour your mixture into it as well as 100g of soft butter. Work the dough with your hands until it gets a supple but non sticky consistency. Add a bit of flour during the process if necessary.
3 – Spread the dough on a sheet of baking paper and place it on your mold. Don’t forget to pierce a few holes in the bottow of the pie with a fork. Put it in the oven for about 20 minutes.
4 – Meanwhile, we’re going to tackle the lemon pastry cream. Mix three egg yolks with 150g of sugar until the mixture becomes white. Then, add the zests of a whole lemon as well as its juice. Finally, add 4 tbsp of flour.
5 – Heat 30cl of milk until it simmers and add it to your mixture while stiring with a whisk.
6 – Pour the mixture in a saucepan and add a tsp of vanilla extract. Bring the liquid to a boil while stiring constantly. The cream should become thicker quite quickly. When it starts to boil, wait for 30 seconds (still stiring) then remove it from the heat.
7 – Pour the pastry cream into a deep plate and cover it with plastic film. Put it in a bigger bowl filled with iced water in order to cool down the cream.
8 – Finally, let’s tackle the last step : the sirup that will cover the pie. Squeeze two lemons, pour the juice into a saucepan and add the same quantity of water. Warm up the mixture and add 80g of icing sugar to it.
9 – Meanwhile, finely slice two lemons and put the slices into the saucepan. Let it simmer over low heat during ten minutes. Then, take off the lemon slices and put them on a plate. Let the sirup cool down.
10 – Now, you just have to cover the pie ! Pour a thick layer of pastry cream in the bottom and cover it with the lemon slices. Finally, pour the sirup all over the pie and sprinkle with icing sugar. Put your lemon pie in the fridge during a few hours and enjoy !
